Ingredients
  • 4 cups Chicken Broth
  • 2-2/1/2 pounds broccoli, cut into florets
  • 1/2 cup chopped green onions
  • chopped scallions, save some for garnish.
  • 1 tablespoon olive oil
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon pepper
  • 1 cup half-and-half cream
  • Shredded cheddar cheese, for garnish

Directions
  1. In a large saucepan, bring the broth to a boil.
  2. Add broccoli.
  3. Reduce heat, cover and simmer until broccoli is tender, about 10 minutes.
  4. Meanwhile,in a small skillet, saute onions in oil until tender.
  5. Stir into broth.
  6. Remove from heat and let cool, about 10-15 minutes.
  7. Puree in small batches in a blender or food processor until smooth.
  8. Return all batches to saucepan and set aside.
  9. In a bowl, combine flour, salt, nutmeg and pepper.
  10. Slowly add crem, stirring constantly.
  11. Gradually stir into broccoli mixture.
  12. Return to the heat.
  13. Cook over medium heat until heated thoroughly, stirring occasionally.
  14. Pour into soup bowl when hot and garnish with shredded cheddar cheese and diced scallions.
