Broccoli Soup with a Surprise

- 4 cups chicken broth shopping list
- 2-2/1/2 pounds broccoli, cut into florets shopping list
- 1/2 cup chopped green onions shopping list
- chopped scallions, save some for garnish. shopping list
- 1 tablespoon olive oil shopping list
- 1/2 cup all-purpose flour shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1/8 teaspoon pepper shopping list
- 1 cup half-and-half cream shopping list
- Shredded cheddar cheese, for garnish shopping list
How to make it
- In a large saucepan, bring the broth to a boil.
- Add broccoli.
- Reduce heat, cover and simmer until broccoli is tender, about 10 minutes.
- Meanwhile,in a small skillet, saute onions in oil until tender.
- Stir into broth.
- Remove from heat and let cool, about 10-15 minutes.
- Puree in small batches in a blender or food processor until smooth.
- Return all batches to saucepan and set aside.
- In a bowl, combine flour, salt, nutmeg and pepper.
- Slowly add crem, stirring constantly.
- Gradually stir into broccoli mixture.
- Return to the heat.
- Cook over medium heat until heated thoroughly, stirring occasionally.
- Pour into soup bowl when hot and garnish with shredded cheddar cheese and diced scallions.
