Golden Clam Chowder

- 2 celery ribs shopping list
- 2 med. carrots shopping list
- 1 med. onion shopping list
- 2 tsp olive oil shopping list
- 4 garlic cloves,mashed shopping list
- 4 med. potatoes,peeled and diced shopping list
- 2 cans (6-1/2 oz ea.) mminced clams,undrained shopping list
- 1 bottle (8 oz) clam juice shopping list
- 1 c plus 1 TB water,divided shopping list
- 1 tsp dried thyme shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1 can (12 oz) evaporated milk shopping list
- 2 tsp cornstarch shopping list
- 2 bacon strips,cooked and crumbled shopping list
How to make it
- Finely chop carrots,celery and onions.In a Dutch oven,saute vegetables in oil until tender. Add garlic,cook1 min longer.
- Stir in potatoes,clams,clam juice,1 c water,thyme,salt and pepper.
- Bring to boil. Reduce heat;cover and simmer 12-15 mins till potatoes are tender.
- Gradually stir in milk;heat through. Combine cornstarch and remaining water until smooth;stir into chowder. Bring to boil;cook and stir 2 mins or till thickened. Stir in bacon. Great served with ham and brie melts!
