Pasta With Potatoes, Peas And Bacon

- 1 medium potato scrubbed and thinly sliced with a mandolin shopping list
- 1 medium onion and thinly sliced with a mandolin shopping list
- 1 cloves garlic roughly chopped shopping list
- dried thyme shopping list
- dried sage shopping list
- 2 TBSP crumbled bacon- cooked shopping list
- 1/2 cup exotic dried mushroom mix- soaked and chopped- liquid reserved shopping list
- 1 cup frozen peas shopping list
- 2 cups whole wheat penne - cooked (about 1 cup dry) shopping list
- olive oil shopping list
- kosher salt and freshly cracked pepper shopping list
How to make it
- Cook pasta and reserve 2 cups cooking liquid
- In a large saute pan, cook onion in olive oil until soft
- Add garlic and cook another minute or two until fragrant.
- Add potatoes, salt, pepper, and herbs to taste
- Add some of the mushroom soaking liquid and the mushrooms
- Cover and cook until the potatoes are soft, stirring once or twice and adding pasta liquid if necessary.
- When potatoes are tender, add pasta, peas and bacon with additional pasta liquid and cook for another 5 minutes to blend flavours and warm peas and bacon through.
- *Leftovers keep well for up to 3-4 days

I like one pot recipes! I made this up for my lunch today. I don't have a mandolin so I just sliced everything very thinly. I didn't add mushrooms as I don't care for them and I used Italian seasoning and plain ol' pasta. I don't think I've ever ea...more
