How to make it

  • Cook pasta and reserve 2 cups cooking liquid
  • In a large saute pan, cook onion in olive oil until soft
  • Add garlic and cook another minute or two until fragrant.
  • Add potatoes, salt, pepper, and herbs to taste
  • Add some of the mushroom soaking liquid and the mushrooms
  • Cover and cook until the potatoes are soft, stirring once or twice and adding pasta liquid if necessary.
  • When potatoes are tender, add pasta, peas and bacon with additional pasta liquid and cook for another 5 minutes to blend flavours and warm peas and bacon through.
  • *Leftovers keep well for up to 3-4 days

    I like one pot recipes! I made this up for my lunch today. I don't have a mandolin so I just sliced everything very thinly. I didn't add mushrooms as I don't care for them and I used Italian seasoning and plain ol' pasta. I don't think I've ever eaten potatoes with pasta before! Very good and very easy. Added a mushroom-less picture :) and a thread in IMI 9/151/3 Thanks for a filling lunch, Softie!
