How to make it

  • In a medium bowl, combine rum and the raisins
  • Cover and let soak for at least 6 hours or overnight
  • Preheat oven to 350 degrees
  • Coat a 9x9 inch baking pan with nonstick cooking spray
  • In a large bowl, use an electric mixer to beat the butter and brown sugar until lightened
  • Beat in eggs and vanilla until well combined
  • Sift flour and salt together into the batter
  • Mix gently until no trace of the dry ingredients remain
  • Strain the rum soaked raisin (discard rum or save for another use, or just drink, LOL)
  • Mix raisins into dough
  • Using a silicone spatula, spread the batter evenly into the prepared baking pan
  • You may have to use your finger, as the batter is very sticky(flour fingers first)
  • Bake for 30 minutes or until toothpick inserted in center comes out clean
  • Let cool on a rack for 1 hour
  • Cut just before serving
