3 Cheese Scallop Pototoes

- 4 cups thinly sliced potatoes ( I leave on the skins) shopping list
- 1 small onion choppped shopping list
- 3 garlic cloves, chopped fine shopping list
- 1 tsp salt shopping list
- 3 tbsp flour shopping list
- 4-6 tbsp butter shopping list
- 1/4 cup chives (fresh or dried) shopping list
- 1-1/4 cups Half N Half shopping list
- 1 tsp salt shopping list
- 1 tsp pepper shopping list
- 1/2 tsp paprika shopping list
- 1 tsp dried mustard shopping list
- 24 oz pkg of Shredded cheddar cheese Mix shopping list
- 1/2 cup parmesan cheese shopping list
- 1 cup blue cheese shopping list
How to make it
- In boiling salted water, add sliced pototoes and parboil about 6-8 minutes only.
- In frying pan, saute butter with onion, chives & garlic for about 3-5 minutes.
- In bowl add flour, salt, pepper, paprika & mustard; mix
- Whisk into onion mixture and stir till pasty.
- Whisk in Half N Half and on medium low heat, whisk until it begins to thicken.
- In a buttered 9 x 13 pan, you will be doing 2 layers of each of: pototoes, sauce & cheese
- First layer: pototoes
- Second Layer: Sauce
- Third Layer: Cheeses; Note: (all blue cheese goes here)
- Repeat Layers ending with Cheeses
- Note: If it looks too dry; add more Half N Half, but not too much to flood it.
- Bake at 350 for 35-45 minutes or till pototoes are tender and cheeses are melted & golden brown
- Take out of oven and let sit for about 5 minutes
