How to make it

  • In boiling salted water, add sliced pototoes and parboil about 6-8 minutes only.
  • In frying pan, saute butter with onion, chives & garlic for about 3-5 minutes.
  • In bowl add flour, salt, pepper, paprika & mustard; mix
  • Whisk into onion mixture and stir till pasty.
  • Whisk in Half N Half and on medium low heat, whisk until it begins to thicken.
  • In a buttered 9 x 13 pan, you will be doing 2 layers of each of: pototoes, sauce & cheese
  • First layer: pototoes
  • Second Layer: Sauce
  • Third Layer: Cheeses; Note: (all blue cheese goes here)
  • Repeat Layers ending with Cheeses
  • Note: If it looks too dry; add more Half N Half, but not too much to flood it.
  • Bake at 350 for 35-45 minutes or till pototoes are tender and cheeses are melted & golden brown
  • Take out of oven and let sit for about 5 minutes

    Oh my! This sounds incredible...love the addition of dry mustard & paprika. The beauty of this is you can use any kind of cheese, but your combination sounds perfect!
