Stuffed Courgettes

- 1 parsnip peeled and diced shopping list
- 2 courgettes/Zucchini shopping list
- 60g grated cheddar cheese shopping list
- 1/4 nutmeg grated shopping list
- plenty black pepper shopping list
- 1tsp grainy mustard shopping list
- 30g parmesan grated shopping list
How to make it
- Steam Parsnips till soft, about 15mins and mash in a bowl.
- Steam Courgettes whole for about 5mins till just tender but still quite crunchy.
- Cut lengthwys and scoop put the seeds and a bit of the flesh leaving a 'boat'.
- Dice the courgette centres and mix with the parsnips, Cheddar, nutmeg, pepper and mustard.
- Place courgette boats on a tray or dish, cut side up. distribute the mixture evenly between the halves and sprinkle withthe Parmesan.
- Bake in oven at 180c for around 20mins or until golden.
