Chicken Caccitori

- 3 chicken breasts shopping list
- 2 tsp sea salt shopping list
- Fresh cracker pepper shopping list
- All purpose flour to dredge chicken shopping list
- 2 (16oz) cans of diced tomatoes (I used the one with roasted garlic) plus juice shopping list
- I 8oz container of baby bella mushrooms shopping list
- 4 cloves of garlic, minced shopping list
- 1 small onion, chopped shopping list
- 2 tbsp caper berries, without brine shopping list
- 1/2 cup white wine shopping list
- 1/2 cup, plus extra, chicken broth shopping list
- 1 Bay leaf shopping list
- 2 tsp dried basil shopping list
- 1 tsp dried oregano shopping list
- olive oil shopping list
How to make it
- 1. Cut chicken breasts into bite sized pieces and season with salt and pepper.
- 2. Dredge chicken lightly with flour
- 3. Heat a large skillet on medium heat and coat bottom with the oil
- 4. Brown chicken in the skillet, roughly 4 minutes per side, depended on thickness.
- 5. Once chicken is brown on all sides, remove from pan and cover
- 6. Add garlic and onions and saute until onions are tender, about 5 minutes and season with salt and pepper
- 7. Add wine and simmer for 5 minutes
- 8. Add tomatoes plus juice, chicken broth, mushrooms, bay leaf, capers, oregano and basil and bring to a simmer
- 9. Replace chicken to the skillet and simmer for 20 minutes.
- If liquids reduce too quickly, add extra chicken broth.
- I served this dish with angel hair pasta and topped with Parmesan cheese.
