How to make it

  • 1. Cut chicken breasts into bite sized pieces and season with salt and pepper.
  • 2. Dredge chicken lightly with flour
  • 3. Heat a large skillet on medium heat and coat bottom with the oil
  • 4. Brown chicken in the skillet, roughly 4 minutes per side, depended on thickness.
  • 5. Once chicken is brown on all sides, remove from pan and cover
  • 6. Add garlic and onions and saute until onions are tender, about 5 minutes and season with salt and pepper
  • 7. Add wine and simmer for 5 minutes
  • 8. Add tomatoes plus juice, chicken broth, mushrooms, bay leaf, capers, oregano and basil and bring to a simmer
  • 9. Replace chicken to the skillet and simmer for 20 minutes.
  • If liquids reduce too quickly, add extra chicken broth.
  • I served this dish with angel hair pasta and topped with Parmesan cheese.
