How to make it

  • 1. In a bowl combine milk, salt, pepper, chopped onion, beaten egg yolks and flour to the mashed potato. Mix well together and then place in fridge to chill.
  • 2. I left the mixture in the fridge until i was ready to make them. About 1 hour.
  • 3. Place bread crumbs in a bowl and beat the egg then take the mixture out of the fridge and shape into croquettes and then dip in egg and then dip in the bread crumbs and place on a greased baking sheet.
  • 4. I placed them covered back into the fridge until I was ready to bake them in the oven, you can fry them if you want, in a little oil.
  • 5. When ready to bake i put them in a 350 degree F oven for 20 minutes.

Great idea for hors d'oeuvres == picturing a double batch of these on a big platter with several dipping sauces. I would dub them "gourmet tater tots".
