Creamy Corn Chowder

- 1 large onion, chopped shopping list
- 1/4 cup Earth Balance Buttery Spread shopping list
- 2 cups water shopping list
- 2 cans cream-style corn shopping list
- 4 medium potatoes, peeled and cut into 1/2-inch cubes shopping list
- 2 cups So Delicious coconut milk Creamer (Original) shopping list
- 1 1/2 teaspoons salt shopping list
- 3/4 teaspoon pepper shopping list
How to make it
- In a large soup pot, saute onion in Earth Balance until tender. Add the water, corn, and potatoes, and bring to a boil.
- Reduce heat, cover and simmer for 16-20 minutes or until potatoes are tender.
- Reduce heat to low. Stir in the creamer, salt, and pepper.
- Cook for 5-10 minutes or until heated through, stirring occasionally.
