Chewy Sunflower - Guava Bars

- 1/2 cup butter, softened shopping list
- 1/2 cup sugar shopping list
- 1/4 cup guava (or other fruit) jam shopping list
- 1 tbsp fresh-grated ginger shopping list
- 1/4 tsp nutmeg shopping list
- 1 tbsp mesquite flour shopping list
- 3/4 cup flour shopping list
- 1/2 cup whole wheat flour shopping list
- 1/4 cup oats shopping list
- 1 tbsp flaxseed meal shopping list
- 1/4 tsp salt shopping list
- 1/2 tsp baking soda shopping list
- 1/4 cup water shopping list
- 1/2 tbsp vanilla shopping list
- 1/2 cup dark raisins shopping list
- 1/4 cup dried cranberries shopping list
- 1/4 cup sunflower seeds shopping list
How to make it
- Preheat the oven to 350F, line a 9" pan with parchment.
- Beat together butter and sugar in a large bowl until fluffy, add jam and ginger and beat in well.
- In a medium bowl, whisk together nutmeg, flours, oats, flaxseed meal, salt and baking soda.
- Add half the dry mixture to the creamed blend, beating in, then add water and vanilla, mixing well.
- Add the remaining dry ingredients, the raisins, cranberries and sunflower seeds. Mix just until combined.
- Spread evenly in the pan.
- Bake for 25 minutes, until it springs back when touched. Cool completely in the pan.
- This cuts easiest when thoroughly chilled.
