Cajun Crawfish Creole

- 1 onion, chopped shopping list
- 1 celery, chopped shopping list
- 1 carrot, chopped shopping list
- 3 baby belle mushrooms, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1 small red bell pepper, chopped shopping list
- 2 Tbsp flour shopping list
- 2 Tbsp butter or olive oil shopping list
- 1 cup white wine shopping list
- 2 cups chicken broth shopping list
- 1 14oz can diced tomatoes shopping list
- 1 Tbsp tomato paste shopping list
- 1 pound frozen crawfish tails shopping list
- 1 tsp. creole seasoning such as Tony's or Emeril's shopping list
- 1/2 tsp. thyme shopping list
- dash of Tobasco shopping list
- 1 Bay leaf shopping list
- prepared rice or quinoa shopping list
How to make it
- Combine flour and butter in pan. Cook 2-3 min. Add chopped veggies and saute until soft. Add wine to veggies and cook until reduced by half. Add chicken broth, tomatoes, tomatoe paste and seasonings. Cover and simmer for 20 minutes. Add crawfish tails and cook an additional 10 min. Serve over rice or quinoa! Enjoy!
