A coconut macaroon that is chewy, soft and moist. I came up with this recipe after trying to find one that was like the macaroons in the supermarket. I drizzle them with melted chocolate for extra oomph, when the occasion merits it.

You find them in the Health food isle of at least my grocery store and I have been wanting to recreate them myself, this look almost exactly like what is listing in his ingredients, this is what is listed- Unsweetened Coconut, Honey and Egg Whites, No synthetic color, artificial flavors, chemicals or preservatives. so that didn't give me a lot to go on. But this looks amazing, and low sugar. I am going to use a can of sweetened coconut milk instead of a can of sweetened condensed milk.

I'm not sure about the Jennies...I've never seen that brand. I love the ones that are in the bakery section of Safeway grocery stores, and these are pretty close. Let me know how they turn out with the coconut milk....since the consistency is different than the sweetened condensed milk, I'm wondering how they will stand up. The flavor would be amazing, though! Good luck.
