How to make it

  • Preheat oven to 325•.
  • Line 2 baking sheets with parchment paper or teflon liners.
  • Combine coconut, condensed milk and extracts in a large bowl.
  • With electric mixer, beat egg whites and salt to medium firm peaks. Fold in flour, then fold 1/3 of the egg whites into coconut mixture to lighten. Fold in remaining egg whites.
  • Drop half of coconut mix. by level tablespoonfuls onto baking sheets. Top each with another level spoonful of mixture, to form mounds.
  • Bake until golden, 25 minutes.
  • Remove from pans, store at room temp.

    Hi Marie,
    I'm not sure about the Jennies...I've never seen that brand. I love the ones that are in the bakery section of Safeway grocery stores, and these are pretty close. Let me know how they turn out with the coconut milk....since the consistency is different than the sweetened condensed milk, I'm wondering how they will stand up. The flavor would be amazing, though! Good luck.

    I was so excited when I came across this, are you talking about recreating Jennies Coconut Macaroons? You find them in the Health food isle of at least my grocery store and I have been wanting to recreate them myself, this look almost exactly like what is listing in his ingredients, this is what is listed- Unsweetened Coconut, Honey and Egg Whites, No synthetic color, artificial flavors, chemicals or preservatives. so that didn't give me a lot to go on. But this looks amazing, and low sugar. I am going to use a can of sweetened coconut milk instead of a can of sweetened condensed milk.
