Tray-baked Chicken

- Brine: shopping list
- 1 qt water shopping list
- 2 TB kosher salt shopping list
- 1/3 c honey shopping list
- 3 cloves garlic crushed shopping list
- 2 sprigs fresh sage,leaves only shopping list
- 1/4 c apple-cider vinegar shopping list
- juice and zest of 1 lemon shopping list
- Bake: shopping list
- 4 chicken breasts,bone-in,skin on shopping list
- 2 slices smoked bacon,finely chopped shopping list
- 3 sweet potatoes,scrubbed and thinly sliced shopping list
- 4 med. potatoes,scrubbed,thinly sliced shopping list
- 1 med. onion,peeled,thinly sliced shopping list
- 2 sprigs fresh sage leaves,shredded shopping list
- olive oil shopping list
- sea salt and fresh black pepper shopping list
- 1-1/3 c chicken broth shopping list
- 2/3 c heavy cream shopping list
- 1 c grated parmesan cheese shopping list
- a few pats butter shopping list
How to make it
- Mix brine in large bowl,add chicken Cover with plastic wrap;refrigerate 2 to 8 hours
- Remove chicken from brine;let come to room temperature. Drain chicken,discarding brine and pat dry with paper towels
- Preheat oven to 350'. In roasting pan,toss bacon,veggies,garlic,and sage with olive oil and a pinch of salt and pepper. Pour in broth. Cook 30 mins.
- Remove veggie pan from oven;pour in cream and sprinkle with pepper and Parmesan . Add chicken,doting pats of butter on each piece. Cook 35 mins or until chicken is golden..
