Crustless Artichoke And Spinach Mini-quiche

- 10 oz frozen chopped spinach shopping list
- 1 cup grated mozzarella shopping list
- 3 eggs shopping list
- 1 lb ricotta shopping list
- 1 small chopped onion shopping list
- 1 clove garlic shopping list
- 1 tsp salt shopping list
- 2 tbsp olive oil shopping list
- 1 can artichokes shopping list
How to make it
- 1. Preheat oven to 350 degrees
- 2. Cook spinach until wilted. Squeeze dry.
- 3. Mix eggs, ricotta, mozzarella, onions, oil, artichokes and spinach together
- 4. Bake in muffins for 20 minutes. (If you want to put it all in a spring form, bake for 40 minutes).
