Southwest Chicken Stew

- 2 lbs boneless,skinless chicken(breast or thigh or both) shopping list
- 1 TB canola oil shopping list
- 2 c chopped onions shopping list
- 1 c chopped green pepper or red bell pepper shopping list
- 2 cloves garlic,minced shopping list
- 1 TB chili powder shopping list
- 1/2 tsp dried oregano shopping list
- 3 c cubed potatoes shopping list
- 14.5 oz can chicken broth shopping list
- 14.5 oz can diced tomatoes shopping list
- 15 oz can yellow corn,drained shopping list
- 1/4 c fresh cilantro or parsley shopping list
How to make it
- Cut chicken into bite-size pieces. Heat oil in a Dutch oven and brown chicken over med-high heat.
- Add onions,gereen pepper and garlic and saute 3 mins.
- Add chili powder,oregano,potatoes and chicken broth. Cover and cook over med-low heat for 45 mins or till potatoes are tender.
- Add tomatoes,corn and cilantro. Cover and cook 10 mins. till heated through.
