How to make it

  • Cut chicken into bite-size pieces. Heat oil in a Dutch oven and brown chicken over med-high heat.
  • Add onions,gereen pepper and garlic and saute 3 mins.
  • Add chili powder,oregano,potatoes and chicken broth. Cover and cook over med-low heat for 45 mins or till potatoes are tender.
  • Add tomatoes,corn and cilantro. Cover and cook 10 mins. till heated through.

    Fearless Pepper Provisioner! A whole Scotch bonnet is a scary thing. Sounds absolutely yummy but I don't think I could do the highland route.
