Coconut Pineapple Pie Recipe
This is from an old church cookbook. It was a hit with my family so I thought I'd add it.

Ingredients
  • 1 cup Sugar
  • 3 tablespoons All-purpose Flour
  • 1 cup Light Corn Syrup
  • 1 cup flaked Coconut
  • 1 8-ounce can crushed pineapple, drained
  • 3 Eggs, beaten
  • 1 teaspoon Vanilla extract
  • 1 unbaked pie pastry shell, 9-inches
  • 1/4 cup butter, melted

Directions
  1. In a bowl, combine sugar and flour.
  2. Add the corn syrup, coconut, pineapple, eggs and vanilla.
  3. Mix well.
  4. Pour into pastry shell.
  5. Bake at 35 degrees for 50-55 minutes.
  6. (Cover loosely with foil if the top browns too quickly before pie is done.)
  7. Pie is done when a knife inserte comes out clean.
  8. Cool on a wire rack.
  9. Chill in refrigerator before cutting.
