Almost Fat-free Colorful Chicken Stew Recipe
This is almost fat-free comfort food. Made in a slow-cooker it's a set-it-and-forget-it meal for days when you're too busy to cook. Use the veggies right from the garden!!!

Ingredients
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 can Italian diced tomatoes, undrained
  • 2 medium potatoes, peeled and cut into about 1/2-inch cubes
  • 5 medium carrots, chopped
  • 3 celery ribs, chopped
  • 1 large onion, peeled and chopped
  • 1 medium green pepper or sweet red pepper, chopped
  • 2 cans (4 ounces each) mushroom stems and pieces, drained (I don't grow my own so I just use the canned.)
  • 2 chicken bouillon cubes, can use low-sodium bouillon
  • 2 teaspoons sugar
  • 1 teaspoon chili powder
  • 1/4 teaspoon pepper
  • 1 tablespoon cornstarch
  • 2 cups cold water

Directions
  1. In a 5-quart slow cooker, combine all the ingredients EXCEPT cornstarch and water.
  2. In a small bowl, combine cornstarch and water.
  3. Stir cornstarch and water mixture into chicken mixture.
  4. Cover and cook on low for 8-10 hours or until vegetables are tender.
  5. If your slow cooker is like mine, check that the potatoes are soft!
