Blueberry Strudel

- 5 phyllo dough Sheets, shopping list
- 1/2 stick of melted butter, shopping list
- 1 8 oz. package of cream cheese, shopping list
- 1 cup + 2 Tb of granulated sugar, shopping list
- 1 cup of confectioners sugar, shopping list
- 1 tsp cornstarch, shopping list
- 1 Tb lemon juice + 1 Tb lemon zest, shopping list
- 2 cups blueberries, shopping list
- 2 tsp vanilla extract, shopping list
- 1 egg, shopping list
- water and milk. shopping list

- For the filling: Mix blueberries, 1 cup of sugar, lemon juice and zest, and cornstarch. Simmer until thickened then let it cool. shopping list

- For the cream cheese: Mix the cream cheese with 1 tsp vanilla and 2 Tb sugar. shopping list

How to make it
- Preheat oven to 350 degrees.
- ***************************************
- Brush first sheet of phyllo dough with the melted butter, then add second layer.
- Repeat until last layer is covered with butter.
- Spread the cream cheese up to the borders leaving a 2 inch space all around.
- Top the cream cheese with the filling, try not to mix up the cream cheese and the filling too much if you have to spread the blueberries around evenly.
- Fold in the bottom, 2 sides and top and roll it away from you until you have a log.
- Brush top with egg wash (1 eggs + 1 Tb water) and bake until medium to dark golden brown. About 25 minutes or so.

- For the glaze you mix 1 tsp of vanilla into the confectioner's sugar then slowly add milk until it's slightly runny.
- Top the strudel when it comes out of the oven.
