Paella Mixtos

- 2 medium sized chicken breasts shopping list
- 24-30 shrimp shopping list
- 1 can of chopped clams, with juice shopping list
- 1 can diced tomatoes with green chiles (or rotel brand) shopping list
- 3-4 cups chicken broth shopping list
- 1 package of yellow rice with seasoning shopping list
- 1 medium yellow onion, coarsely chopped shopping list
- 3 minced garlic cloves shopping list
- 1 1/2 cups frozen peas shopping list
- 1 - 2 tsp hot sauce (I always use Franks) shopping list
- Pinch of cumin shopping list
- extra virgin olive oil shopping list
- salt and fresh cracked pepper shopping list
How to make it
- Cut the chicken into bite sized pieces and season with salt and pepper. In a large pan over medium-high heat coat bottom with extra virgin olive oil and saute onions and garlic. Once onions become tender add chicken and cook until browned. Once chicken is brown, add raw yellow rice and mix together. Add clams, clam juice, tomatoes, hot sauce and 3 cups of the chicken broth, make sure to have extra on hand, and cumin. Allow liquids to come to a boil and cover. Checking occasionally to ensure bottom does not burn. If liquids reduce too quickly add about 1/4 cup of broth at a time. Check rice at about 20 minutes. Once rice is almost done, add shrimp and peas. Once shrimp are pink and peas are tender, serve and enjoy.
- Note: Paella de Mariscos is made with just fish. Instead of chicken, substitute any white flaky fish and add midway through the rice cooking.
