Out With The Old Tea Cake

- 1 1/2 cups flour shopping list
- 1 1/2 cups whole wheat flour shopping list
- 2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/3 cup almond meal shopping list
- 2 tsp pumpkin pie spice shopping list
- 1/4 cup canola oil shopping list
- 3 oz chopped dates shopping list
- 5 oz raisins shopping list
- 2 oz chopped prunes shopping list
- 2 oz chopped cashews shopping list
- 2 oz chopped walnuts shopping list
- 1/2 cup dark brown sugar shopping list
- 1/2 cup sugar shopping list
- 1/4 cup pureed strawberries shopping list
- 1/2 cup 100% fruit juice shopping list
- 1/2 cup unsweetened plain almond milk shopping list
- 1 tbsp lemon juice shopping list
How to make it
- Preheat the oven to 300F, grease a 9" springform pan.
- In a small bowl, mix flours, baking powder, baking soda, almond meal and pumpkin pie spice. Set aside.
- Heat oil in a pot over medium heat.
- Add dates, raisins, prunes, cashews and walnuts. Cook just slightly (about 1 minute), stirring well.
- Add sugars, berry puree and fruit juice. Cook until the sugar is dissolved and the mixture is beginning to bubble vigorously.
- Remove from heat and cool 2 minutes, then stir in the almond milk, lemon juice and flour mixture.
- Pour into the prepared pan and bake 1 hour, until it tests done.
