How to make it

  • Preheat the oven to 300F, grease a 9" springform pan.
  • In a small bowl, mix flours, baking powder, baking soda, almond meal and pumpkin pie spice. Set aside.
  • Heat oil in a pot over medium heat.
  • Add dates, raisins, prunes, cashews and walnuts. Cook just slightly (about 1 minute), stirring well.
  • Add sugars, berry puree and fruit juice. Cook until the sugar is dissolved and the mixture is beginning to bubble vigorously.
  • Remove from heat and cool 2 minutes, then stir in the almond milk, lemon juice and flour mixture.
  • Pour into the prepared pan and bake 1 hour, until it tests done.
