Rainbow Rice & Squash

- 1/2 cup chopped carrots shopping list
- 1/4 cup chopped green onion shopping list
- 1/4 cup red bell pepper shopping list
- 1 teaspoon butter shopping list
- 1 teaspoon olive oil shopping list
- 1 cup chicken broth or vegetable broth shopping list
- 1/2 cup uncooked long grain rice shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- 1 medium yellow (or zucchini) squash, halved lengthwise and then cut in half-moon slices shopping list
How to make it
- Saute carrots, bell pepper, and onion in butter/olive oil until tender.
- Stir in the broth, rice, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 12 minutes.
- Stir in the yellow squash. Cover and simmer 6-10 minutes longer or until rice and vegetables are tender.
