Ranchero Catfish

- 4 catfish fillets shopping list
- 1 cup finely crushed tortilla chips shopping list
- 1/2 teaspoon chili powder shopping list
- 3 tablespoon lime juice shopping list
- 1 tablespoon olive oil shopping list
- 1 cup prepared salsa shopping list
- 1 tablespoon fresh cilantro, chopped shopping list
- Additional sauces to taste shopping list
How to make it
- Preheat oven to 450 degrees.
- Lightly grease baking sheet.
- Cut each fillet in half, lenghtwise.
- Rinse in cold water and pat dry with a paper towel.
- In a bowl, combine the crushed tortillas and chili powder. Mix well.
- Combine the lime juice and olive oil in a shallow dish, whisk.
- Dip each fillet into the lime/oil mixture and then immediately into the seasoned tortilla crumb mixture to coat.
- Place onto the baking sheet.
- Sprinkle the fillets with any remaining crumbs.
- Bake in the preheated oven until crisp and golden, about 8-10 minutes or until catfish flakes when tested with a fork.
- Warm the salsa, I used a small saucepan instead of the microwave so it wouldn't boil and become "soupy".
- Sprinkle the fish with the warm salsa, sprinkle with cilantro and serve.
