Ranchero Catfish Recipe
My neice went "fishing" at a fish hatchery for kids and my reward was too much catfish. I got creative with this one. Easy and she loved it.

Ingredients
  • 4 Catfish fillets
  • 1 cup finely crushed tortilla chips
  • 1/2 teaspoon chili powder
  • 3 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 cup prepared salsa
  • 1 tablespoon fresh cilantro, chopped
  • Additional sauces to taste

Directions
  1. Preheat oven to 450 degrees.
  2. Lightly grease baking sheet.
  3. Cut each fillet in half, lenghtwise.
  4. Rinse in cold water and pat dry with a paper towel.
  5. In a bowl, combine the crushed tortillas and chili powder. Mix well.
  6. Combine the lime juice and olive oil in a shallow dish, whisk.
  7. Dip each fillet into the lime/oil mixture and then immediately into the seasoned tortilla crumb mixture to coat.
  8. Place onto the baking sheet.
  9. Sprinkle the fillets with any remaining crumbs.
  10. Bake in the preheated oven until crisp and golden, about 8-10 minutes or until catfish flakes when tested with a fork.
  11. Warm the salsa, I used a small saucepan instead of the microwave so it wouldn't boil and become "soupy".
  12. Sprinkle the fish with the warm salsa, sprinkle with cilantro and serve.
