How to make it

  • Preheat oven to 450 degrees.
  • Lightly grease baking sheet.
  • Cut each fillet in half, lenghtwise.
  • Rinse in cold water and pat dry with a paper towel.
  • In a bowl, combine the crushed tortillas and chili powder. Mix well.
  • Combine the lime juice and olive oil in a shallow dish, whisk.
  • Dip each fillet into the lime/oil mixture and then immediately into the seasoned tortilla crumb mixture to coat.
  • Place onto the baking sheet.
  • Sprinkle the fillets with any remaining crumbs.
  • Bake in the preheated oven until crisp and golden, about 8-10 minutes or until catfish flakes when tested with a fork.
  • Warm the salsa, I used a small saucepan instead of the microwave so it wouldn't boil and become "soupy".
  • Sprinkle the fish with the warm salsa, sprinkle with cilantro and serve.
