Avocado Pie

- 2 egg yolks beaten shopping list
- 1 can sweetened condensed milk shopping list
- About 1 1/2 cups avocado peeled(3 small - 2 large) shopping list
- 1/2 cup lemon juice (fresh squeezed best) shopping list
- 3/4 tsp grated lemon zest shopping list
- 8 oz. sour cream shopping list
- 1 Tbsp sugar shopping list
- 1 tsp vanilla shopping list
- 1 graham cracker crust (or cooked pastry crust if you wish) shopping list
How to make it
- Combined beaten egg yolks and sweetened condensed milk in saucepan. Heat over medium
- heat until thickened. Be careful here. It is really easy to scortch the milk. You MUST stir it
- constantly.
- Using your food processor or blender (food processor is better), puree the avocado. Add lemon
- juice and zest. Puree again. Add milk mixture and puree for final time. Pour into pie shell and
- chill for at least one hour.
- Combine sour cream, sugar and vanilla until sugar is disolved. Pour over filling and chill until
- ready to serve.
