Funeral Cake

- 2 eggs shopping list
- 2 cups flour shopping list
- 1 can crushed pineapple, not drained shopping list
- 1 cup pecans, chopped shopping list
- 3 cups sugar, divided shopping list
- 2 tsp baking soda shopping list
- 1 small can evaporated milk shopping list
- 1 stick butter shopping list
How to make it
- Preheat oven 375.
- Mix baking soda in with flour. Then add eggs, 2 cups sugar and pineapple. Mix well by hand.
- Pour into well greased 13x9 pyrex dish. Bake for 30 minutes or until toothpick inserted in center comes out clean.
- While cake is baking, mix all remaining ingredients together for the icing. Bring to boil, then reduce heat and let cook for 10 minutes.
- Spread icing onto the cake after it is removed from the oven.
