Onion And Bacon Soup

- 6 slices bacon,cut crosswise into 1" pieces shopping list
- 3 lg. yellow onions,halves and thinly sliced lengthwise shopping list
- 4 c chicken broth shopping list
- bread baguette slice 1" thick shopping list
- 1-1/2 c grated gruyere cheese shopping list
How to make it
- In med. Dutch oven or heavy pot cook bacon over med-high heat,stirring occasionally till well browned,about 5 mins. Pour off all but 1 TB fat from pot.
- Add onions and reduce heat to med.. Cook,stirring occasionally and scraping up browned bits from pot with wooden spoon until onions are very soft and deep golden brown,about 1 hour,(reduce heat if onions are over browning. Add 4 c chicken broth and bring to boil. Remove from heat.
- Heat broiler,witth rack in top position,transfer soup to 6 8 oz. broilerproof baking dishes set on rimmed baking sheet. Top each with baguette slice and grated cheese. Transfer sheet to oven and broil till cheese is melted and browned in spots,about 3 mins. Serve
