How to make it

  • Put water in the sauce pan and set on stove top to boil. In a small measuring cup combined all sauce ingredients and mix until combined.
  • Put the yellow bell pepper and two cap fulls of EVOO in a stir fry skillet or regular skillet and stir occasionally until tender. Add the shredded carrot and cabbage. Cook on low until everything is done.
  • Cook udon noodles according to package directions then drain off water and pour noodles into strainer then run cold water over them.
  • Put the veggies on medium heat and pour in the sauce and mix well. Add the noodles. Stir until combined and heated. Put in a bowl and serve.
