Spring Udon Noodles For One

- 1 Small batch of udon noodles.(About 20-40 noodles.) shopping list
- Small sauce pan of water to boil shopping list
- 2 Cap Fulls of EVOO (extra virgin olive oil) shopping list
- 1 Small Thinly Sliced yellow bell pepper(You can use any color.) shopping list
- 5 cabbage leaves Sliced into thin slices.(Any color will do.) shopping list
- 1 Medium carrot Shredded with a cheese shredder or potato peeler shopping list
Sauce
- 3 Cap Fulls of teriyaki sauce shopping list
- 1 1/2 Tablespoons Dijon or regular mustard shopping list
- 10 Drops of lemon juice shopping list
- 2 Teaspoons of light brown sugar shopping list
- 1 1/2 Teaspoons of honey.(Light colored honey.) shopping list
- 1 Teaspoon corn Starch (Or flour.) shopping list
How to make it
- Put water in the sauce pan and set on stove top to boil. In a small measuring cup combined all sauce ingredients and mix until combined.
- Put the yellow bell pepper and two cap fulls of EVOO in a stir fry skillet or regular skillet and stir occasionally until tender. Add the shredded carrot and cabbage. Cook on low until everything is done.
- Cook udon noodles according to package directions then drain off water and pour noodles into strainer then run cold water over them.
- Put the veggies on medium heat and pour in the sauce and mix well. Add the noodles. Stir until combined and heated. Put in a bowl and serve.
