I've done this numerous times, and like how the skin gets a nice crispness and golden brown color. If using an open tube bundt pan, be sure to place a cookie sheet under it to catch any drippings.

Ingredients
  • 6 Tbsp. butter, melted
  • 1 Tbsp. olive oil
  • whatever seasonings you like. I use garlic salt, salt & pepper, along with lemon pepper seasoning.
  • 1 (4 to 5 lb) whole chicken

Directions
  1. Preheat oven to 375 degrees.
  2. Wash and pat dry the chicken with paper towels.
  3. Place chicken over the tube of the cake pan, bottom end down.
  4. Melt the butter in a microwave safe bowl.
  5. Stir in the olive oil & your desired seasonings.
  6. Brush seasoned butter mixture all over the chicken.
  7. Cook for 1-1/4 to 1-1/2 hours or until a thermometer reads 165 degrees in the breast.
  8. Let chicken rest for 10 minutes before carving.
  9. (I have a convection roast setting on my oven, and this recipe only takes 45 minutes to an hour. All ovens are different, adjust accordingly.)

The method is the oven-version of 'beer-butt' chicken which is usually on the grill...
