Low Cal Hamburger Minestrone

- 1 pound ground beef 93% shopping list
- 1 medium onion chopped shopping list
- 1 tablespoon minced garlic- more if you like shopping list
- 1 cup of thin chopped celery shopping list
- 2 cups of water shopping list
- 1 zucchini chopped shopping list
- 1 summer squash chopped shopping list
- 2 cups of cole slaw mix (if not just use shredded cabbage) shopping list
- 1/2 cup of uncooked elbow macaroni or broken pasta shopping list
- 2 boulion cubes or granule packets about 2 teaspoons shopping list
- 1 teaspoon of italian seasoning shopping list
- 1 can (28 ounces) whole tomatoes undrained shopping list
- 1 cup of kidney beans shopping list
- salt and pepper to your taste. shopping list
How to make it
- Cook ground beef, onion and garlic in pot until beef is brown,
- stir in the remaining ingredients, breaking up tomatoes.
- heat to a boiling
- cover and simmer for about 1/2 hour, until macaroni is tender. I like it cooked longer to mesh the flavors together more.
- Serve with grated cheese if desired.
