Strawberry Yogurt Muffins

- 2 cups all-purpose flour, plus a pinch more shopping list
- 32 oz vanilla yogurt shopping list
- 1 &1/2 cups fresh strawberries, diced shopping list
- 4 tbsp honey shopping list
- 1 cup vanilla almond milk shopping list
- 1/4 cup coconut oil shopping list
- 2 eggs shopping list
- 4 tbsp baking powder shopping list
- 1 tsp salt shopping list
- 1/4 cup brown sugar shopping list
- baking spray shopping list
How to make it
- Preheat oven to 375 degrees Fahrenheit. Grease muffin trays with baking spray and set aside.
- Whisk the yogurt, eggs, sugar, honey, almond milk & coconut oil together in a large bowl.
- In a smaller bowl, mix flour, baking powder, and salt together.
- Mix the dry ingredients into the wet ones, but don't over-mix (about 12 strokes should do it).
- Lightly coat the diced strawberries with a bit of flour, and fold into the batter.
- Fill the muffin cups 2/3 of the way.
- Bake on the middle rack for 20 minutes, or until golden on top.
- Drizzle with honey, and enjoy!
