Banana – Sunflower Energy Balls

- 3 large, over-ripe bananas shopping list
- 1/3 cup sunflower seed “butter” shopping list
- 1 tsp maple syrup shopping list
- 1 ¾ cups quick-cooking (not instant) rolled oats, divided shopping list
- 1 cup Kamut flakes (or more rolled oats) shopping list
- ½ cup raisins shopping list
- ½ cup diced dates shopping list
- ½ cup sesame seeds shopping list
How to make it
- Mash bananas, sunflower seed butter and maple syrup in a large bowl.
- Stir in 1 cup of the oats, Kamut flakes, raisins and dates, combining well.
- Place remaining oats and sesame seeds in a large zip-top bag.
- Scoop small amounts of the banana mixture and with damp hands roll into balls.
- One by one, drop into the oats in the bag and shake to coat. Place on a plate.
- Enjoy immediately or store, covered, in the fridge up to 5 days.
