Steak And Rice Noodle Dinner Salad

- 1 1/2lbs sirloin, or higher quality, steak shopping list
- 4T butter shopping list
- 4 cloves garlic, minced shopping list
- 1-3t red pepper flakes shopping list
- 1 1/2lbs fresh asparagus, trimmed and cut into about 1" pieces shopping list
- 8oz fresh baby spinach shopping list
- about 1oz fresh arugala leaves(optional) shopping list
- 1lb fresh mushrooms, quartered or sliced shopping list
- 1lb rice noodles, soaking in hot water shopping list
- 1/3 cup fresh lime and/or lemon juice(I used 1/4 cup lime, and topped it off with lemon :) shopping list
- 1/2 cup olive oil shopping list
- 1/2 cup peanut oil(or canola or other vegetable oil) shopping list
- 2t dry or concentrated Thai seasoning(this can be found in toothpaste looking tubes in your grocer's produce section...it contains ginger, lemon grass, cilantro, etc) shopping list
- 2T fresh dill, minced or sub 1T dry dill weed shopping list
- 1T worcestershire sauce shopping list
- 2T fish sauce shopping list
- 2T honey shopping list
- 1/2-1 cup loosely packed fresh cilantro leaves shopping list
- 1 cup sliced, roasted almonds(I used garlic flavored :) shopping list
- 1 cup french fried onions(I used black pepper flavored:) shopping list
- kosher or sea salt and fresh ground black pepper shopping list
How to make it
- Lightly season steak with salt and pepper and grill or broil to medium rare.
- Let rest about 5 minutes, then slice thinly, against the grain See Photo. Set aside.
- In large stock pot or similar(I used cast iron), melt butter and add garlic and red pepper flakes. Cook about 2 minutes, over low heat.
- Add mushrooms and asparagus and continue to cook over low heat, stirring occasionally, while preparing dressing.
- In medium glass bowl, combine citrus juice, Worcestershire and fish sauces, honey, Thai seasoning, dill, and salt and pepper. Whisk well.
- Slowly add oils, a lil at a time, whisking constantly, until all oil is added and well mixed.
- Separate noodles as much as you can, and drain.
- Add noodles, arugala and spinach to mushroom and asparagus mixture and toss to combine. See Photo
- Pour dressing over all of these ingredients and add sliced steak, toss to coat, and cover, keeping heat on low, and let "steam" about 5-7 minutes.
- Remove lid, turn off heat and serve.
- Serve with plenty of fresh cilantro, slivered almonds and fried onions.
