Carrot, Potato & Cabbage Soup

- 4 large carrots, thinly sliced shopping list
- 2 large potatoes, thinly sliced shopping list
- 1 large onion, thinly sliced shopping list
- 1/4 medium head green cabbage thinly sliced shopping list
- 2 cloves garlis smashed shopping list
- 6 cups chicken stock shopping list
- 1 tablespoon olive oil shopping list
- 1/4 teaspoon dried thyme shopping list
- 1 teaspoon dried parsley shopping list
- 1/4 teaspoon oregano shopping list
- 1 teaspoon salt shopping list
- ground black pepper to taste shopping list
How to make it
- 1. Combine all ingredients in a large saucepan and cook over a medium high heat and simmer until the carrots are tender and then transfer to a blender in small batches and blend until smooth
