How to make it

  • Set oven to 350 degrees
  • Slice and cube the chicken and put it in a frying pan coated with olive oil.
  • While the chicken is cooking, dice the onions and the yellow squash. Throw them in with the chicken after it is cooked up (7-10 minutes).
  • While the squash and onions are softening up, pull out an 11X17 baking dish. Pour about a quarter of the sauce on the bottom and spread it out. Put down a layer of six corn tortillas, and then about a quarter of the sauce on top of them.
  • Season the chicken and vegetables and stir the seasonings in. Once fully mixed, dump the mixture on bed of corn tortillas.
  • Open the beans, drain and rinse them and spread them out on the chicken mixture. Do the same with the 8 oz of corn. Put another quarter of the jar over the mixture.
  • Now the fun part, dump about 3/4 of the cheese on the mixture of chicken, veggies, beans, and corn.
  • Lay another six corn tortillas on top and spread the remaining chili on top of the tortillas.
  • Cover with tin foil and put in a pre-heated oven for 35 minutes.
  • When 35 minutes are up, pull the "lasagna" out, un-cover it, spread the remaining cheese on top and put it back in until fully melted (5-10 minutes).
  • Slice and serve.
