Mexican Lasagna

- 2 lbs chicken (dark or light, both or work well, depends on the taste you like) shopping list
- 1 onion shopping list
- 3 yellow squash shopping list
- 8 oz frozen corn shopping list
- 1 can of black beans (my grand mother was Cuban, so I use black beans more often than not. Pinto would work, as would red kidney beans) shopping list
- 1 package of corn tortillas shopping list
- 1 12 oz jar of red chili (depending on where you are, others call it enchilada sauce, my wife, from Colorado, for example) shopping list
- 1 lb of shredded cheddar cheese shopping list
- 1 tbsp red chili powder shopping list
- 1 tsp garlic powder shopping list
- salt shopping list
- pepper shopping list
How to make it
- Set oven to 350 degrees
- Slice and cube the chicken and put it in a frying pan coated with olive oil.
- While the chicken is cooking, dice the onions and the yellow squash. Throw them in with the chicken after it is cooked up (7-10 minutes).
- While the squash and onions are softening up, pull out an 11X17 baking dish. Pour about a quarter of the sauce on the bottom and spread it out. Put down a layer of six corn tortillas, and then about a quarter of the sauce on top of them.
- Season the chicken and vegetables and stir the seasonings in. Once fully mixed, dump the mixture on bed of corn tortillas.
- Open the beans, drain and rinse them and spread them out on the chicken mixture. Do the same with the 8 oz of corn. Put another quarter of the jar over the mixture.
- Now the fun part, dump about 3/4 of the cheese on the mixture of chicken, veggies, beans, and corn.
- Lay another six corn tortillas on top and spread the remaining chili on top of the tortillas.
- Cover with tin foil and put in a pre-heated oven for 35 minutes.
- When 35 minutes are up, pull the "lasagna" out, un-cover it, spread the remaining cheese on top and put it back in until fully melted (5-10 minutes).
- Slice and serve.
