How to make it

  • Place 1 cup chicken stock in slow cooker. Set roast inside.
  • In blender add the remaining 1/2 cup chicken stock and brown sugar, chipotles and adobo. Blend until smooth. Pour mixture over roast.
  • Add juice of mandarins, garlic , ginger, shallot, thyme, bay leaves, salt and pepper. Mix to combine.
  • Cook on low for 8 hours, or high for 4-5 hours. Shred pork and remove from heat.
