Peach Upside-down Cake Recipe
This dish is best when served warm with milk or tea. My family loves eating it outside during summer. An absolute favorite!

Ingredients
  • 1/3 cup butter
  • 1/2 cup brown sugar
  • 2 cans sliced peaches drained, or 5 ripe peaches
  • 1 1/2 cups flour
  • 1 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 cup soft shortening
  • 2/3 cup milk
  • 1 tsp. vanilla
  • 1/2 tsp. lemon juice
  • 1 egg

Directions
  1. Heat oven to 350
  2. Melt butter in heavy 10 inch skillet or square pan, 9x9x1 3/4 inches
  3. Sprinkle brown sugar evenly over the butter
  4. Arrange the cut peaches over the sugar- butter mixture
  5. Stir flour, sugar, baking powder, and salt in a large bowl
  6. Add shortening, milk, vanilla, and lemon
  7. Beat 2 minutes on medium speed
  8. Scrape sides and bottom of the bowl constantly
  9. Add egg and beat 2 more minutes
  10. Bake 45 minutes
  11. Turn immediately over on a platter, but leave pan over cake for 3min
  12. Serve warm with wipped cream
