How to make it

  • In a large skillet, saute the onion in olive oil, then add the jalapeno pepper.
  • Add the uncooked rice and cook for 5 minutes, stirring frequently.
  • Add the beans, coconut milk and chicken broth and bring to a boil.
  • Reduce the heat to low, and add the thyme, jerk seasoning, and salt and pepper to taste.
  • Cook until the broth and coconut milk are reduced, about 25 minutes. Add more broth, if necessary.
  • As with many foods, I think the flavors in this are better if it's made a day ahead and then reheated...

    Has a little heat. Has a little sweet. Not going to rate this one or add it to the "IMI" group. I used dry beans and the rice was undercooked at a half hour.
    Used a long grain white rice but not Basmati.
    Thinking you're right about adding more water.
    But your rice in the pic has that shaggy look like instant or 5 minute rice.
