Home Made Horseradish

- 1 large horseradish root shopping list
- salt to taste shopping list
- sugar to taste shopping list
- white vinegar to taste shopping list
- mayonnaise, top quality brand shopping list
How to make it
- Peel the root well and cut up in small pieces. Using a metal blade in a food processor, grind up fine (or hand grate very fine). process until you get it fine as possible
- Dump horseradish into a bowl and moisten with a some vinegar and sugar and add some salt to taste. Stir in enough mayonnaise (start with 1/4 to 1/2 cup) to bind the mixture. Adjust seasonings if needed. This will make the equivalent of 3 jars of the store bought glass kind. Store in glass not metal. Refrigerate and chill well. It will last a very long time.
