How to make it

  • Whisk together water, milk powder, eggs, salt and sugar in large bowl attachment for mixer.
  • Add butter, bread flour, and instant dry yeast and mix on low speed, with hook attachment, until just combined, then mix on medium speed for approximately 15 minutes (check after 11 minutes by doing "window test"
  • Preheat 400F/210C
  • Place dough in large bowl, cover with plastic wrap and let set it aside for 30 minutes, or until it had doubled in size.
  • Take dough out of bowl, place on lightly floured surface, and cut 2oz pieces with dough blade. Roll with index finger and thumb until rounded.
  • Place each dough ball onto baking sheet lined with parchment paper.
  • Brush the top of each ball with egg wash, sprinkle with salt and pepper and ground oregano.
  • Bake for 20-25 minutes or until golden brown (keep checking as I've noticed a variation when I'm using a different oven)
  • Makes 3 dozen/ 2oz rolls

    I used this recipe to make hamburger buns so I sprinkled the tops with sesame seeds instead of oregano. I also halved the recipe which produced nine good size buns. I did have to use far more flour than called for but it was a very humid day and flour weighs more when it's humid. Great recipe that produced a nice, soft interior and a crusty exterior.
