How to make it

  • Place chicken breasts skin up, in a buttered shallow stove-to-table baking dish. Use some of the melted butter and paint the chicken with it. Sprinkle chicken with 1/2 tsp salt and place in preheated oven 375, uncovered, bake for 30 minutes -- longer if the juices are not dried up.
  • Melt the butter in a medium sized saucepan. Mix the flour, sugar, remaining salt, dry mustard, cinnamon and ginger together and stir into the melted butter. While stirring constantly, add the orange juice slowly, until you have a thick, smooth sauce. Pour the sauce over the partially cooked chicken and bake 40 minutes more. If chicken is not brown enough on tip, turn on the broiler for a few minutes -- watch closely.
  • Serve with rice.
