How to make it

  • Place potatoes in large, heavy pan and cover with water.
  • Add salt and let settle then top off with more water, if needed, to cover taters by about 1/2 inch
  • Bring to a boil and let cook at a low boil for about 25 minutes, until taters are fork tender.
  • Remove to a cooling rack briefly, so they can develop their "salt coat" then serve. See Photo
  • Serve with chive butter, if desired. See Photo
