Salted Potatoes

- 2- 2 1/2lbs baby potatoes(I used baby fingerlings :) DO NOT CUT and DO NOT USE FULL SIZED POTATOES :) shopping list
- about 1-1 1/2lbs(yes, lbs) of kosher, sea or even rock salt, but DO NOT use iodized or table salt shopping list
- water shopping list
How to make it
- Place potatoes in large, heavy pan and cover with water.
- Add salt and let settle then top off with more water, if needed, to cover taters by about 1/2 inch
- Bring to a boil and let cook at a low boil for about 25 minutes, until taters are fork tender.
- Remove to a cooling rack briefly, so they can develop their "salt coat" then serve. See Photo
- Serve with chive butter, if desired. See Photo
