Tangy Roasted Asparagus

- 2lbs fresh asparagus, trimmed shopping list
- 2T lemon herb infused olive oil(I used a lemon thyme which was fantastic with the bright green taste of the asparagus, but you could use lemon basil, or even verbena shopping list
- 1 lime shopping list
- 4oz goat cheese, crumbled shopping list
- kosher or sea salt and fresh ground black pepper shopping list
- **if you don't want to bother with the infused oil, just use regular olive oil, and replace the black pepper with lemon pepper shopping list
How to make it
- Combine olive oil with salt and pepper and toss with asparagus
- Roast asparagus in 425 oven for about 15 minutes(a lil more if you like your veggies softer..we like 'em pretty crisp :)
- When done, immediately sprinkle with cheese, a squirt of lime juice and a lil lime zest.
- You could toss 'em under the broiler for a minute, if you want, to brown the cheese up a bit...I didn't want that, this time...I wanted the creaminess to remain :)
