How to make it

  • Heat 2 TB oil in skillet over high heat. Saute green onions briefly until tender,cool slightly.
  • Combine crabmeat,sauteed green onions,egg,mayo,dry mustard,crushed crackers,cayenne pepper,garlic powder,Old Bay,salt and pepper and the lemon zest and juice. Form into 1/2" thick patties.
  • Coat patties with breadcrumbs.
  • Heat 1/4 c ol in skillet over med-high heat. Cook cakes until golden brown on each side. Drain briefly on paper towels,garnish wit chopped scallions and chives and serve hot.
  • Remoulade sauce:
  • Start with some mayo,add some red pepper relish,garlic , mustard and herbs to taste. These were served with some micro greens.

    Otterpond, there is 8 ounces of breading to 6 ounces of crab, that's filer intensive. Preclare, I'm sure using the buttery crackers lent quiet a distinctive texture and flavor to these crab cakes...
