How to make it

  • Wet Ingredients

  • I used an electric mixer, this can all be done by hand
  • Add the 4 bananas and fruit juice to the mixer
  • Pulse for a few seconds
  • Grate the carrot and add to the mixer
  • Add the walnuts, eggs, honey, olive oil , vanilla essence and lemon juice
  • Pulse for a few seconds until smooth
  • Dry Ingredients

  • Put the wholewheat flour into a large mixing bowl
  • Sieve in the rest of the dry ingredients and mix together
  • Baking

  • Mix the wet and dry ingredients in the mixing bowl until thick
  • Line an average sized bread tin with greaseproof paper
  • Pour the mixture into the tin evenly
  • Place the tin into a pre-heated oven at 180 degrees celcius (350F)
  • Bake for 50mins, turning half way
  • Remove from the oven and leave stand for 10mins in the tin
  • Leave the bread cool out of the tin and serve
