A low-fat turnabout on one of my favourite desserts! Delicious and moist with a slightly crispy top. 3 POINTS for Weight Watchers.

Ingredients
  • 2 c chopped, pitted dates
  • juice of one lemon
  • 1/2 c water
  • 1/2 c cold water
  • 1/4 c stick margarine, softened
  • 2 tbsp prune puree
  • 3/4 c brown sugar
  • 3/4 c all-purpose flour
  • 1/2 c whole-wheat flour
  • 1/2 c spelt or oat flour
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 c steel-cut oats (long-cooking kind)

Directions
  1. Preheat oven to 350 F.
  2. Combine the dates, lemon juice and water in a saucepan.
  3. Cook, covered, on low for 10-12 minutes, stirring occasionally. Remove from heat.
  4. Seperately, cream margarine, prunes, and brown sugar.
  5. Add the flours, salt and baking soda, mix to blend.
  6. Soak oats in cold water 5 minutes. Drain oats and add to above mixture.
  7. Blend well, using your hands.
  8. Press 2/3 of the dough into a greased 9" square pan.
  9. Spread the date mixture overtop of crust, top with crumbled remaining dough.
  10. Bake 30 minutes, cool completely before cutting and serving.
