Egg And Bacon Flan

- 3 medium onions, sliced shopping list
- 6 - 8 rashers smoked back bacon shopping list
- 5 eggs shopping list
- Half a cup of milk shopping list

- An alternative is to add enough flour and a little milk to leftover mashed potatoes to make a dough and use instead of the pastry. It tastes great. shopping list
How to make it
- Line a 12", shallow, round baking dish with either the pastry or the potato dough
- Fry the onions in a little oil until tender
- Roughly chop the bacon, add to the onions and fry until the bacon is just cooked
- Slice the cheese and cover the bottom of the dish with a generous layer (half an inch or so)
- Cover with the bacon and onions
- Beat the eggs and milk, add the black pepper (three or four twists of the mill)
- Pour the liquid over the filling and bake in the centre of a moderate oven for about 40 minutes or until the flan is set and nicely brown on the top
- Delicious hot or cold and freezes well
