How to make it

  • Line a 12", shallow, round baking dish with either the pastry or the potato dough
  • Fry the onions in a little oil until tender
  • Roughly chop the bacon, add to the onions and fry until the bacon is just cooked
  • Slice the cheese and cover the bottom of the dish with a generous layer (half an inch or so)
  • Cover with the bacon and onions
  • Beat the eggs and milk, add the black pepper (three or four twists of the mill)
  • Pour the liquid over the filling and bake in the centre of a moderate oven for about 40 minutes or until the flan is set and nicely brown on the top
  • Delicious hot or cold and freezes well
