How to make it

  • Mix egg, margarine, peppermint extract and sugar together, beat until smooth. Add flour, cocoa, baking powder and salt. Mix until just combined. Divide the dough, and roll into wax paper, into rolls about 2 inches thick. Wrap it in plastic and refrigerate for 2 hours. Preheat oven to 350. Slice the cookie logs into 1/4 inch thick slices. Bake for 13-15 minutes. Melt the chocolate chip glaze and dip the cookies in it once cooled.
