Vegan Thin Mints

- Cookie: shopping list
- 1 cup vegan butter shopping list
- 3/4 cup sugar shopping list
- 1 flax egg or egg replacer shopping list
- 1 tsp vanilla extract shopping list
- 1 1/2 tsp peppermint extract shopping list
- 1 1/2 cups flour shopping list
- 1/2 cup unsweetened cocoa powder shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- Glaze: shopping list
- 1 cup dark chocolate chips shopping list
- 1 tsp vegetable oil shopping list
- 2-3 tsp peppermint extract shopping list
How to make it
- Mix egg, margarine, peppermint extract and sugar together, beat until smooth. Add flour, cocoa, baking powder and salt. Mix until just combined. Divide the dough, and roll into wax paper, into rolls about 2 inches thick. Wrap it in plastic and refrigerate for 2 hours. Preheat oven to 350. Slice the cookie logs into 1/4 inch thick slices. Bake for 13-15 minutes. Melt the chocolate chip glaze and dip the cookies in it once cooled.
