How to make it

  • Peel potatoes, cut to the size of small roasties and boil until done.
  • Slice onions and fry until tender and just browning.
  • Drain and roughly chop the tomatoes. Discard as much of the liquid as you can - or save it to put a Vodka in later. In an ovenproof casserole dish, layer potatoes, onions, tomatoes and cubed cheese - but don't be fussy about it, I give it a bit of a mix together to combine them all and add the salt and pepper now, to your taste.
  • Finish with the grated cheese on top and bake in a moderate oven for 40 minutes.
  • We love this with sausages.
