Fresh Greek(ish) Salad With Goat Cheese Vinaigrette And Pita Croutons

- 5-6 cups mixed greens(I always try to toss in some bitter "greens" too like radicchio or arugula, etc) shopping list
- 1 cucumber, sliced thin(I don't peel) shopping list
- 8-12 cherry tomatoes, halved shopping list
- 1/2 red onion, sliced thin shopping list
- 1 bell pepper, chopped shopping list
For Pita Croutons
- 2 6in(or so) round flat breads, cut into bite sized pieces shopping list
- 3T olive oil or melted butter shopping list
- 1T dry mixed Greek herbs(the blend I use has sage, oregano, thyme, basil, dill) shopping list
- 1t lemon zest shopping list
- kosher or sea salt and fresh ground black shopping list
For goat cheese Vinaigrette
- 2oz sun dried tomato goat cheese shopping list
- juice from 1 lemon shopping list
- 1-2t honey shopping list
- 3T red wine vinegar shopping list
- about 1/4 cup olive oil shopping list
- 1T Dijon shopping list
- 2 cloves garlic, crushed into paste shopping list
- 2t above Greek type seasoning shopping list
- about 1/4 cup salad quality olive oil shopping list
- kosher or sea salt and fresh ground black pepper shopping list
How to make it
For Croutons
- Toss all ingredients together and spread on baking sheet or stone.
- Bake at 400 for about 12 minutes, until browning. Remove and set aside.
For Vinaigrette
- Combine all ingredients, other than oil, in medium glass bowl.
- Whisk together until well blended.
- Add olive oil and whisk well.
- Serve salad greens topped with cucumbers, tomatoes, pepper, onion, croutons and dressing.
