Andalucian Salad

- I lb boiled potatoes, sliced shopping list
- 3 cups grated cheddar cheese shopping list
- 3 sliced onions shopping list
- 2 green peppers, sliced shopping list
- 2 red peppers, sliced shopping list
- 4 celery stalks, stripped and cut into half inch slices shopping list
- Sliced or cubed cucumber shopping list
- Sliced large tomatoes or quartered small ones or cherry toms shopping list
- Green and black olives (optional) shopping list
- canned tuna and/or canned salmon - quantity up to you shopping list
How to make it
- On a large plate, lay the potato slices and sprinkle half of the cheese over them.
- Arrange the other salad ingredients in circles around the plate - or combine them all and put over the top - up to you, it looks good either way
- Put the flaked tuna/salmon over the top and sprinkle with the rest of the cheese
- Scatter the olives on top - or serve them in a side dish.
