White Chocolate, Almond & Cranberry Biscotti

- 1 1/2 cups sugar shopping list
- 2 t. vanilla shopping list
- 4 Large eggs shopping list
- 3 1/3 cups AP flour shopping list
- 1 t. baking soda shopping list
- 1/2 t. baking powder shopping list
- 1/2 t. salt shopping list
- 3/4 cup white chocolate chips shopping list
- 3/4 cup Raw almonds shopping list
- 3/4 cup craisins (or fresh cranberries-chopped) shopping list
How to make it
- Preheat oven to 350 degrees F.
- Combine Sugar through Salt together in a stand mixer. Once the ingredients are blended, add your White Chocolate, Almonds and Craisins.
- Flour your work surface generously; place the ball of dough down on the table. Seperate into 4 equal pieces. Roll each piece into a log that is about 12" long and about 1 1/2" in width. You should be able to place two logs on a 1/2 sheet pan that has been lined with parchment paper, or a silpat.
- Bake for 20-30 minutes; check by putting a toothpick into the middle of the log. If it comes out clean it's ready to slice. If not...put back in the oven for 2-5 minutes longer.
- Once the logs are completely baked, remove from the oven and let cool for 15 minutes on a wire rack.
- Slice each log into 3/4" slices using a bread knife. (make sure to saw through the biscotti to cut through the almonds!!)
- Place each slice back onto the sheet pans and bake for 10 minutes. Take the pans from the oven and flip the biscotti over to bake for another 10 minutes. Repeat this step two more times.
- After the second repeat keep a close eye on them...they will seem a bit soft when they first come out of the oven, but will harden up as they sit on the cooling rack.
- Store in a zipper bag or closed container.
